Ratatouille

<This is for about 3 servings>

 

Ingredients
  • 1/2 onion
  • Chicken (optional, marinated in milk 1 hour)
  • 1.5 tbsp minced garlic
  • Salt and pepper
  • 1 jar tomato sauce
  • Mozzarella cheese
  • Eggplant, tomato, zucchini (thinly sliced)

 

Instruction
  1. Sauté onion and garlic with salt and pepper.
  2. Add chicken (if using) and cook thoroughly, seasoning with pepper.
  3. Stir in tomato sauce.
  4. Arrange sliced eggplant, tomato, and zucchini in a baking dish.
  5. Add a little mozzarella cheese and olive oil on top.
  6. Bake at 390°F (200°C) for 30 minutes.
