Ingredients
- 2 medium potatoes
- 2 tbsp butter
- 1 tbsp olive oil
- Salt & pepper
- Cheese (cut into 4–6 slices)
- 2 strips of bacon
- Plain yogurt (for topping)
- Parsley
Instruction
- Wash the potatoes thoroughly and make slits across each one, deeper than the middle.
- Soak the potatoes in water for about 30 minutes to remove excess starch.
- Melt 2 tbsp of butter in the microwave (about 40 seconds). Add 1 tbsp of olive oil, salt, and pepper, and mix well.
- Pat the potatoes dry and brush them with the butter sauce. Preheat the oven to 395°F (200°C) and bake for about 30 minutes.
- While baking, cut the cheese into slices. Chop the bacon and sauté in a pan until crispy.
- Remove the potatoes from the oven, insert cheese slices into the slits, and bake for another 15 minutes.
- Top the potatoes with plain yogurt, crispy bacon, and a sprinkle of parsley before serving.
