Butter Roasted Potatoes

Ingredients
  • 2 medium potatoes
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt & pepper
  • Cheese (cut into 4–6 slices)
  • 2 strips of bacon
  • Plain yogurt (for topping)
  • Parsley

 

Instruction
  1. Wash the potatoes thoroughly and make slits across each one, deeper than the middle.
  2. Soak the potatoes in water for about 30 minutes to remove excess starch.
  3. Melt 2 tbsp of butter in the microwave (about 40 seconds). Add 1 tbsp of olive oil, salt, and pepper, and mix well.
  4. Pat the potatoes dry and brush them with the butter sauce. Preheat the oven to 395°F (200°C) and bake for about 30 minutes.
  5. While baking, cut the cheese into slices. Chop the bacon and sauté in a pan until crispy.
  6. Remove the potatoes from the oven, insert cheese slices into the slits, and bake for another 15 minutes.
  7. Top the potatoes with plain yogurt, crispy bacon, and a sprinkle of parsley before serving.
