Japchae (Stir-Fried Glass Noodles with Vegetables)

<This is for 2-3 servings>

 

Ingredients
  • 1/2 carrot
  • 1/2 red and yellow bell pepper
  • 1 pound pork
  • 1/2 onion
  • A handful of wood ear mushrooms
  • 5 tbsp soy sauce
  • 5 tbsp oyster sauce
  • 3 tbsp allulose (or sugar)
  • 5 tbsp cooking wine
  • 1/2 tbsp pepper
  • 13.5 oz water
  • 8.8 oz noodles (soaked for 1 hour)
  • Spinach

 

Instruction
  1. Julienne half a carrot, red bell pepper, and yellow bell pepper. Slice the onion thinly and soak wood ear mushrooms for 15-20 minutes, then cut them into bite-sized pieces.
  2. Heat oil in a pan and stir-fry the pork. Add the sliced onion and carrot and stir-fry together.
  3. In a bowl, mix 5 tbsp soy sauce, 5 tbsp oyster sauce, 3 tbsp allulose (or sugar), 5 tbsp cooking wine, 1/2 tbsp pepper, and 13.5 oz water to make the sauce.
  4. Add the soaked wood ear mushrooms and stir-fry.
  5. Add the bell peppers and stir-fry for another 2-3 minutes.
  6. Pour the sauce over the mixture, stir well, and cook for 1-2 minutes.
  7. Drain the soaked noodles and stir-fry them in the pan with the rest of the ingredients. Add spinach, cover the pan, and cook until wilted. Stir everything together and serve.
