Ingredients
- 2 lbs clams
- 1 tbsp salt (for purging)
- 10 garlic cloves (minced)
- Green onions
- Peperoncino
- 1 cup white wine
- 3.5 tbsp butter
- 1 anchovy broth coin (optional)
- 1/2 tbsp salt
- 1/2 tbsp fish sauce
Instruction
- Place the clams in cold water with 1 tbsp of salt. Cover and soak for 1 hour to purge sand.
- Wash the vegetables, chop the green onions, and mince the garlic.
- Heat oil in a pot and sauté the minced garlic and peperoncino until fragrant.
- Rinse the purged clams under cold water.
- Add the clams to the pot with 1 cup of white wine. Cover and bring to a boil.
- Add 3.5 tbsp of butter and 1 anchovy broth coin (optional) for deeper flavor.
- Season with 1/2 tbsp of salt and a dash of fish sauce.
- Add the chopped green onions and simmer briefly.
