Clam Wine Stew

<This is about for 2-3 servings>

 

Ingredients
  • 2 lbs clams
  • 1 tbsp salt (for purging)
  • 10 garlic cloves (minced)
  • Green onions
  • Peperoncino
  • 1 cup white wine
  • 3.5 tbsp butter
  • 1 anchovy broth coin (optional)
  • 1/2 tbsp salt
  • 1/2 tbsp fish sauce

 

Instruction
  1. Place the clams in cold water with 1 tbsp of salt. Cover and soak for 1 hour to purge sand.
  2. Wash the vegetables, chop the green onions, and mince the garlic.
  3. Heat oil in a pot and sauté the minced garlic and peperoncino until fragrant.
  4. Rinse the purged clams under cold water.
  5. Add the clams to the pot with 1 cup of white wine. Cover and bring to a boil.
  6. Add 3.5 tbsp of butter and 1 anchovy broth coin (optional) for deeper flavor.
  7. Season with 1/2 tbsp of salt and a dash of fish sauce.
  8. Add the chopped green onions and simmer briefly.
