Soy-Vinegar Fried Chicken

Ingredients
  • 680g chicken thighs
  • 1/2 cabbage (or lettuce)
  • Green onions
  • 1/2 tbsp salt
  • 1 tbsp cooking wine
  • 1 tbsp oyster sauce
  • Black pepper
  • 6 tbsp potato starch
  • 6 oz water
  • 1.7 oz soy sauce
  • 2 oz vinegar
  • 1.4 oz sesame oil
  • 5 tbsp sugar
  • Chili peppers

 

Instruction
  1. Mix the chicken thighs with 1/2 tbsp salt, 1 tbsp cooking wine, 1 tbsp oyster sauce, black pepper, and 6 tbsp potato starch.
  2. In a bowl, combine 6 oz water, 1.7 oz soy sauce, 2 oz vinegar, 1.4 oz sesame oil, and 5 tbsp sugar to make the sauce.
  3. Chop the green onions and chili peppers into small pieces and add them to the sauce.
  4. Wash and cut the half cabbage (or lettuce) into appropriate-sized pieces.
  5. Heat a generous amount of oil in a pan and fry the chicken. Frying it twice will make it extra crispy.
