Galbijjim (Braised Short Ribs)

<This is for 4-5 servings>

 

Ingredients
  • 3 pounds beef short ribs
  • 1 1/3 cups soy sauce
  • 2/3 cup cooking wine
  • 2/3 cup allulose (or sugar)
  • 1 tbsp minced garlic
  • 2/3 tbsp minced ginger
  • 2/3 cup chopped green onion
  • 1 tbsp black pepper
  • 4 tbsp sesame oil
  • 1 1/2 cups water
  • 1/2 radish
  • 1 carrot
  • Shiitake mushrooms
  • 2 small green onions
  • 1 onion
  • Shishito peppers (optional)

 

Instruction
  1. Soak the beef ribs in cold water for 1 hour to remove the blood.
  2. Mix soy sauce, cooking wine, allulose (sugar), minced garlic, minced ginger, chopped green onion, black pepper, and sesame oil to make the sauce.
  3. Pour the sauce over the ribs and bring it to a boil.
  4. Add 1 1/2 cups of water, then add bite-sized radish and carrots and simmer.
  5. Prepare shiitake mushrooms (optional cross-cut), green onions, and onion.
  6. Add the mushrooms, green onions, and onion. Adjust seasoning with water if too salty.
  7. Add stemmed shishito peppers (optional) and simmer until all vegetables are tender.
