Green Curry

Ingredients
  • 3 tbsp green curry paste
  • 1 2/3 cups coconut milk
  • 1/2 eggplant
  • 3 tbsp sugar
  • 5 oz shrimp
  • 5 basil leaves (Thai basil is preferred)
  • 1 red chili
  • 1/2 tbsp fish sauce
  • About 15 kaffir lime leaves
  • 1 cup water

Prepare kaffir lime leaves, sugar, fish sauce, green curry paste, coconut milk, eggplant, red chili, basil leaves (Thai basil is preferred) + shrimp.

 

Cut 1/2 eggplant and 1 red chili into bite-sized pieces. Prepare 5 basil leaves (Thai basil preferred) and about 15 kaffir lime leaves (soak in water for 5 minutes), along with 5 oz shrimp.

 

Boil 2/3 cup water and add 3 tbsp of green curry paste to the boiling water and mix well and add 1 2/3 cups coconut milk.

 

Add 1/2 eggplant, 5 oz shrimp, 3 tbsp of sugar, 1/2 tbsp of fish sauce, 5 basil leaves, and cook until the shrimp turn red.

 

Add 1 red chili and 15 kaffir lime leaves (soaked in hot water for 5 minutes), then let it simmer.
