Melanzane alla Parmigiana

Ingredients
  • 1 eggplant
  • 1/2 onion
  • 1 tbsp minced garlic
  • Flour
  • Tomato sauce
  • Bacon slices
  • Mozzarella cheese
  • Salt (to taste)

Thinly slice the eggplant, season with salt.

 

Coat the slices with flour to help absorb the sauce.

 

Heat oil in a pan and cook the eggplant slices for about 30 seconds on each side. Remove them from the pan and set them aside.

 

Chop the 1/2 onion.

 

In the same pan, heat oil, then add the chopped onion and 1 tbsp of minced garlic. Sauté until fragrant, then pour in the tomato sauce and let it simmer.

 

Lay out the eggplant slices and layer each with bacon and mozzarella cheese, then roll them up tightly.

 

Place the rolls in the prepared tomato sauce, ensuring the seam side is facing down to prevent them from unraveling.

 

Bake in the oven at 180°C (356°F) for 25 minutes.
