<This is for about 2-3 servings>
Ingredients
- 1/2 onion
- 8.8 oz squid
- 1 bell pepper
- 1 lemon
- 16 oz mussels
- 1.5 tbsp minced garlic
- 6 oz tomato paste
- Salt & pepper
- 2 tbsp paprika powder
- 4 cups seafood stock or 4 cups water with 2 seafood bouillon coins
- 1 2/3 cups rice
- Shrimp
Instruction
- Sauté the onion and minced garlic in olive oil.
- Add the bell pepper and sauté together.
- Stir in the tomato paste, then season with salt, pepper, and paprika powder.
- Pour in 4 cups seafood stock or 4 cups water with 2 seafood bouillon coins.
- Add rice, mussels, and shrimp. Cook until the rice and seafood are just done.
- Separately, sauté the squid in another pan and season lightly with salt.
- Add the squid to the paella and finish with lemon on top.
