Paella

<This is for about 2-3 servings>

 

Ingredients
  • 1/2 onion
  • 8.8 oz squid
  • 1 bell pepper
  • 1 lemon
  • 16 oz mussels
  • 1.5 tbsp minced garlic
  • 6 oz tomato paste
  • Salt & pepper
  • 2 tbsp paprika powder
  • 4 cups seafood stock or 4 cups water with 2 seafood bouillon coins
  • 1 2/3 cups rice
  • Shrimp

 

Instruction
  1. Sauté the onion and minced garlic in olive oil.
  2. Add the bell pepper and sauté together.
  3. Stir in the tomato paste, then season with salt, pepper, and paprika powder.
  4. Pour in 4 cups seafood stock or 4 cups water with 2 seafood bouillon coins.
  5. Add rice, mussels, and shrimp. Cook until the rice and seafood are just done.
  6. Separately, sauté the squid in another pan and season lightly with salt.
  7. Add the squid to the paella and finish with lemon on top.
